Yeast Dough for Pies, Rolls, etc.
Today, I want to share a yeast dough recipe that is perfect for pies, rolls, and other delicious baked goods. This recipe is simple and time-tested. You can easily make it even if you don’t have much baking experience. The finished dough is soft, airy, and very tasty. Give it a try, and you’ll see that homemade baking can be easy and enjoyable!
Ingredients
- 5-7 g dry yeast
- 625 g (300+325) flour
- 375 g water (40°C)
- 110 g mashed cooked potatoes
- 75 g butter (melted)
- 40-60 g sugar (the amount of sugar depends on how sweet you want your baked goods to be)
- 6 g salt
- Egg for brushing
Instructions
- Mix 300 g of flour, salt, and dry yeast in one bowl.
- In another bowl, mix the sieved potatoes, water (40°C), melted butter, and sugar. Mix well.
- Pour this mixture into the bowl with the flour. Mix everything together, you can use a mixer.
- When the mixture becomes smooth, add the remaining flour (325 g). Switch the mixer attachment from a whisk to a dough hook and knead the dough (you can also knead by hand). The dough should be smooth and not sticky.
- Transfer the dough to an oiled bowl and cover with a lid.
Fermentation
You can leave this yeast dough to ferment for three hours at room temperature or refrigerate it for up to 24 hours.
I usually leave the dough in the refrigerator for about 12 hours (overnight). In the morning, I take it out and let it sit at room temperature for 30 minutes.
Shaping & Proofing
After 30 minutes, divide the dough into the desired number of parts, depending on what you are baking. Shape them into rounds and let them rest for 45 minutes, covered to prevent drying. If making burger buns, shape them and let them proof for another 45-60 minutes. If making pies, add the filling at this stage, shape the pies, and let them proof for 45-60 minutes.
During the proofing time, preheat the oven. Once the dough is proofed, it’s ready to bake.
