Tiramisu

Tiramisu is a light and delicate Italian dessert made with creamy cheese, savoiardi biscuits, and espresso mixed with alcohol. Its name translates to “pick me up” or “cheer me up,” perfectly reflecting the effect of this dessert – a light but rich flavor that instantly lifts your spirits.

The history of tiramisu spans several decades. It’s the perfect dessert for any occasion, whether a family dinner or a special event. Tiramisu is easy to make and always looks elegant on the table.

In this recipe, I will show you how to create the perfect tiramisu that will delight you and your guests with its taste and texture.

Ingredients

  • 250 g of mascarpone cheese
  • 80 g of sugar
  • 3 eggs
  • Vanilla sugar to taste
  • 30-50 g of rum, Marsala wine or Amaretto
  • 20-24 ladyfinger biscuits (Savoiardi)
  • Cocoa powder for dusting
  • 200 ml of strong coffee or espresso, sweetened

Preparation

  • Brew a strong coffee, add two teaspoons of sugar and let it cool. Once cooled, stir in your choice of rum, Marsala, or Amaretto.
  • Beat the egg yolks with sugar until the sugar has dissolved and the mixture is pale in color. Gradually add the mascarpone cheese, mixing each addition at a low speed with a mixer.
  • Whip the egg whites to soft peaks, ensuring they are stable but not too stiff. Gently fold the whites into the yolk mixture to keep it light and airy.
  • Quickly dip each ladyfinger biscuit into the alcohol-infused coffee and lay them sugar-side up in a dish to cover the entire bottom. Spread half of the mascarpone mixture over this layer.
  • Add a second layer of coffee-dipped ladyfingers followed by the remaining mascarpone cream. Smooth out the top.
  • Refrigerate the dish for 6 hours or overnight, allowing the flavors to meld.
  • Just before serving, dust the entire surface of the tiramisu with cocoa powder.
  • Ensure that both the eggs and mascarpone are cold, taken straight from the fridge.
  • You can “fit” the ladyfingers into the dish ahead of time, ensuring that the entire base is covered (you might need to cut a few biscuits to fill any gaps). This dessert requires two such layers.
  • Dip the ladyfingers very quickly into the coffee, and only dip the sugar-coated side.
