Cottage Cheese Pancakes or Syrniki
Today, I want to share with you a recipe for Cottage Cheese Pancakes, also known as syrniki. These tender and aromatic cottage cheese delights are perfect for a cozy breakfast or a light dessert. Moreover, they are very easy to make, and the result is always satisfying—golden, soft, and incredibly delicious syrniki. This recipe is not only simple but also brings a lot of joy. Additionally, syrniki pair wonderfully with sour cream, honey, or berry jam.
This Cottage Cheese Pancakes recipe has long been a family favorite. We only make syrniki this way. Just like this Sponge Cake, syrniki are a regular treat at our table. But ever since we moved to Finland, finding the right kind of cottage cheese has been a challenge. The local stuff is so different from what we had in Latvia. So, every now and then, we take a trip to another city that has a Baltic food store. It’s our (and syrniki’s) lifesaver!
Ingridients
- 500 g cottage cheese
- 3 egg yolks
- 4 – 5 tablespoons sugar
- vanilla sugar to taste
- a pinch of salt
- 100 g flour
- butter and vegetable oil for frying
Instructions
Mash the cottage cheese with a fork.
Add the egg yolks, sugar, vanilla sugar, and salt. Mix well.
Sift in the flour and mix everything again.
Form the cottage cheese pancakes and fry them on both sides.

Syrniki are a fantastic way to start the day. However, if your mornings are usually rushed, don’t worry—you can prep them the night before. Simply shape the Syrniki and stack them in a container with parchment paper in between so they don’t stick together. Then, in the morning, all you have to do is fry them up and enjoy!
